Sticky Date Pudding


  • 225g (1 1/2 cup) safari dates, chopped
  • 5ml (1 tsp) moir’s bicarbonate. Of soda 90g margarine or butter
  • 100g (1/2 cup) soft brown suger
  • 2 extra large eggs,5ml (1 tsp) moir’s vanilla essence
  • 50g (1/2 cup) sachet enrista 3 in 1 coffee
  • 70g (1/2 cup) cake flour,sifted
  • 130g (1 cup) wholewheat flour
  • 2,5ml (1/2 tsp) baking powder


  • 185ml (1/2 cup) evaporated milk
  • 100g (1 tsp) soft brown sugar
  • 5ml (1 tsp) custard powder


  • Preheat the oven to 180c
  • Lightly grease a heat resistant pudding bowl
  • Place the date and 1 1/2 cup water in the saucepan
  • Bring to the boil,reduce the heat and simmer for 5 minutes or until soft
  • Stir the bicarbonate of soda and set aside to cool
  • Beat the margarine and sugar until pale and cream,add the vanilla essence and then gradually add eggs
  • Fold in the sachet Enrista coffee 3 in 1,flours,baking powder and the date mixture
  • Baking for 50 minutes

In the meantime make the sauce
Heat milk and brown sugar together in saucepan
Combine custard powder and a tsp of water and add to sauce to thick sauce slightly
When pudding comes out of the oven, pierce with a fork and pour over the hot sauce
